Ingredients for 3 servings:
- 230 ml almond milk (almond drink) with vanilla flavor
- 3 tbsp chia seeds
- 3 tbsp maple syrup
- 200 g Hokkaido pumpkin(s), peeled
- 1 packet of Bourbon vanilla sugar
- some walnut kernels, quartered, roasted, for garnishing
- 2 tsp cinnamon powder
- 1 tsp ginger powder
- 1 tsp nutmeg
- 1 ½ tsp allspice powder
- 1 ½ tsp clove powder
- ¼ tsp cardamom powder
Instructions
Working time approx. 15 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 10 minutes; Total time approx. 4 hours 25 minutes
a slightly different dessert
Peel the pumpkin, cut into cubes, and cook in very little water until tender, then chill. Mix the chia seeds with the almond milk and let it sit for 3-4 hours, or overnight if necessary. Then puree all ingredients, including the chia seed and almond milk, and the pumpkin cubes, with a hand blender. Let the dessert stand for a while, then pour into bowls and garnish with the toasted walnuts.
