Ingredients for 4 servings:

  • 1 kg pumpkin flesh, of the floury variety
  • 150 ml milk or cream
  • 100 g wheat flour or spelt flour
  • ½ tsp herbal salt, or salt
  • some pepper, from the mill
  • 1 clove(s) garlic, finely chopped, not squeezed
  • 1 tbsp chives, finely chopped
  • 1 liter olive oil, for frying

instead of French fries, pumpkin fries

Cut the pumpkin into sticks like French fries. Mix the flour, herb salt, and a pinch of pepper in a bowl. Toss the pumpkin sticks in milk or cream, then add them to the mixed flour and shake well to coat them well. Deep-fry the kilo of pumpkin sticks in three batches, drain well on kitchen paper, place in a bowl, and keep warm. Sprinkle with chives and garlic before serving.
