Rice salad 'creative'

Ingredients for 4 servings:

  • 2 cups rice
  • 1 medium-sized bell pepper(s)
  • 1 can of tangerine(s)
  • 1 jar mayonnaise (250 ml)
  • 1 dashes balsamic vinegar
  • salt and pepper
  • 1 handful of ham, diced
  • 1 small onion(s)
  • mushrooms
  • Paprika powder
  • Herbs de Provence, frozen, as desired
  • possibly pickled gherkins

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Side dish for grilling

Cook the rice in salted water. Meanwhile, in a bowl, combine the mayonnaise with balsamic vinegar, a little canned mandarin orange juice, and the spices. Season the dressing a bit more strongly, as the rice will “dampen” the flavor. Also, note that the dressing needs to be a bit thinner than desired, as the rice absorbs a lot of liquid. Cut all other ingredients into fairly small pieces and add to the dressing. Mushrooms, diced ham, and onions can also be sautéed, but they also taste excellent raw. Allow the cooked rice to cool slightly and then stir in. Be sure to season again before serving! The salad can be enjoyed immediately, while still lukewarm. It can also be prepared in advance; it tastes great cold, too.
