Ingredients for 6 servings:
- 250 g wholemeal flour
- 250 g flour
- Water
- 1 tsp oil
- 1 cube of fresh yeast
- 1 tsp salt
- 800 g pumpkin flesh, cleaned and pitted weighed
- 1 onion(s)
- 1 garlic clove(s)
- 10 sage leaves, fresh
- 200 g cooked ham, sliced
- 200 g cheese, grated
- 80 g olives, black, pitted
- 1 tbsp oil
- salt and pepper
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes
Knead the yeast dough from the listed ingredients (of course, everyone can make their own yeast dough). Let the dough rise in a warm place for one hour (we always put it under the covers). In the meantime, coarsely grate the pumpkin; finely chop the garlic, onion, and sage. Sauté everything together in the oil, season with salt and pepper. Since the olives, ham, and cheese are also salty, don’t add too much salt! Cut the ham slices into cubes and cut the olives in half. After the dough has risen, knead it thoroughly again and roll it out onto a greased baking sheet. Spread the pumpkin mixture, ham, and olives over the dough and sprinkle with the cheese. Bake at 200°C (top/bottom heat) or 180°C (fan oven) for about 20 minutes, or until the cheese is browned.
