Ingredients for 3 servings:

  • 200 g potatoes
  • 300 g pumpkin flesh
  • 2 eggs
  • 80 g flour
  • ½ bunch chives
  • 1 cup crème fraîche
  • salt and pepper
  • nutmeg
  • n. B. Oil for frying

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Wash the potatoes and pumpkin flesh, peel if necessary, and coarsely grate. Add the eggs and flour. Season with salt, pepper, and nutmeg. Heat the oil in a pan and fry the pumpkin mixture in batches until golden brown. Don’t set the heat too high, or the pumpkin rösti will be very brown on the outside but still raw on the inside. Cut the chives into small rounds and mix with the crème fraîche. Brush each rösti lightly with crème fraîche.
