Ingredients for 4 servings:

  • 2 tbsp pumpkin seeds
  • 1 tbsp pumpkin seed oil
  • 1 tbsp vinegar
  • some water
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Grind the pumpkin seeds very finely in a coffee grinder. Mix with pumpkin seed oil, vinegar, water, salt, and pepper. As with any vinaigrette, a little finesse is required. Pumpkin seed oil has a very intense flavor and can easily overpower a dish. Likewise, you should use very small amounts of oil, water, and vinegar, as well as seasoning, and taste it frequently. If you do this, you’ll end up with a delicious salad vinaigrette with a pleasant, slightly thickened consistency.
