How to cook pumpkin and ginger soup

A delicious pumpkin soup with ginger is relatively easy to cook. For four servings you need around 40 minutes and the following ingredients: 1 Hokkaido pumpkin (approx. 700g), 1 piece of ginger (approx. 5cm), 1 teaspoon vegetable stock, 1 onion, 1 clove of garlic, 4 tablespoons sour cream, curry powder, salt, pepper and oil for frying. Rapeseed oil, for example, is suitable here.

  1. First, wash and halve the Hokkaido squash. Then scoop it out with a spoon. You can process the pumpkin seeds if you like and roast them, for example.
  2. Now cut the pumpkin flesh into cubes. Then peel and chop the onion, garlic clove, and ginger. Bring about 1 liter of water to a boil and add the vegetable broth.
  3. After that, heat the oil in a large saucepan. Make sure that both the pumpkin and the vegetable stock fit in here. First, sauté the onion, then add the garlic and ginger. Then mix in some curry powder and fry the pumpkin until it is lightly browned.
  4. Now put the boiling vegetable broth in the pot and let everything cook together over low heat. After 20 minutes, add the sour cream and stir in a little more water if necessary.
  5. Finally, blend the ingredients together until the soup has a creamy consistency. Now briefly boil the soup again and season with salt and pepper. Your soup is now ready to be eaten.
  6. Optionally, you can decorate your pumpkin and ginger soup with roasted seeds or herbs.
