Pumpkin soup with potatoes – preparation
For the soup, you need about 800 grams of pumpkin, 300 grams of potatoes, a large onion, some butter or sunflower oil, a liter of vegetable stock, a cup of cream, and spices. Depending on your taste, you can also add zucchini and a dash of pepper.
- Wash and peel the squash. If you’re using a Hokkaido squash, you don’t have to peel it. Then remove the seeds and cut the pumpkin into pieces. You can also roast the pumpkin seeds yourself.
- Now peel the onions and potatoes too. If you have zucchini and pepper at home, you can wash them and peel the zucchini to taste. Then core the peppers as well. Cut all the ingredients into rough pieces.
- Put some butter or sunflower oil in a large saucepan. Sauté the onions until they turn golden brown. You can also sauté some potato and pumpkin pieces with the onions for a more intense flavor. Other oils are also suitable for sautéing.
- Then pour the onions into the vegetable broth and add the remaining pieces of vegetables. Boil the mixture for about half an hour. The veggies should be soft at the end, so you can puree them. Check the condition of the vegetables regularly by poking them with a knife.
Further preparation and serving of the soup
Remove the pot from the stove as soon as the soup has finished cooking. Now you can puree the pumpkin soup with a hand blender.
- Be careful when blending, though, because if the soup splatters, it can scald you and splatter the kitchen. You can avoid splashes by only turning on the hand blender in the soup, or by using a splash guard.
- Finally, stir in the cream and season the soup. You can season the soup with salt and pepper. If you like herbs, then you can also add chopped dill or parsley as spices.
- The soup can easily be stored in the refrigerator for a few days. So you can pre-cook. When serving, you can add some pumpkin seed oil to the pumpkin soup, which is very healthy and rich in vitamins. If you like parmesan, you can also add a sprinkling of parmesan or grated mozzarella to the plates.
