Ingredients for 5 servings:
- 1 small pumpkin(s) (Hokkaido)
- 3 tomatoes
- ½ onion(s)
- 1 tbsp balsamic vinegar
- salt and pepper

also tastes good as a dip
Dice the pumpkin and tomatoes and sauté them in a saucepan with a little water. Add the finely chopped onion just before cooking, then puree everything together. Season with balsamic vinegar, salt, and pepper and let cool (but it also tastes great when the spread is still a bit warm). It goes perfectly with whole-grain bread or pretzels.
