Purple cauliflower puree with hemp seeds

Ingredients for 2 servings:

  • 1 cauliflower, purple
  • 200 ml water, lightly salted, or vegetable stock
  • 3 tbsp olive oil or rapeseed oil
  • 2 tbsp hemp seeds
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Clean the cauliflower, divide it into florets, and cook it in a pressure cooker for about 4 minutes. It will take about 20 minutes to cook in a regular pot. Drain and puree with the olive oil and spices. Sprinkle the hemp seeds over the cauliflower before serving.
