Purple Potato Pancakes with Herb Curd

Ingredients
 

For the potato pancakes

  • 6 Piece Purple potatoes
  • 1 whole Egg
  • 1 Eßl. Flour
  • 1 good pr. Marjoram
  • Salt
  • Oil for frying

Herb quark

  • 250 gr, Quark 40%
  • 2 good splash Lemon juice
  • 1 middle Clove of garlic finely diced
  • 2 Eßl. Finely chopped parsley
  • 2 Teaspoon. Extra virgin olive oil
  • 2 Eßl. Cream or yogurt
  • 1 half Red onion
  • 1 couple of cranberries With juice

Instructions

  • I grate the potato half coarsely, half finely. Add a whole egg and the flour, season with salt, marjoram, and pepper. Mix everything well. For myself, I like to fry in a stainless steel pan, if you don't like that, you can use a coated pan.
  • I only put the oil in the pan when it has already warmed up, with 2 tablespoons I now place the small particles in the pan and fry them cross-wise. When they are done I leave them on a piece of kitchen paper for a short time and then they can be arranged.

Herb quark

  • Put the quark in a bowl with the lemon juice, stir the cream (or yoghurt) until smooth, season to taste. Now you can serve as you like it yourself. To give the whole thing additional color, I mixed a teaspoon of cranberries with a teaspoon of red wine and added a splash of color.
