QimiQ cream with port wine balsamic cherries

Ingredients for 4 servings:

  • 250 g QimiQ
  • 125 g chocolate (75% cocoa content)
  • 100 ml milk
  • 1 tbsp sugar
  • 300 g cherry(s), fresh or frozen (pitted)
  • 200 ml port wine, red
  • 1 tbsp balsamic vinegar
  • 3 tbsp sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Chop the chocolate and melt it in a bain-marie. Stir until smooth. Add the melted chocolate and milk and mix well. Pour the mixture into molds or glasses (approx. 100 ml each) and chill in the refrigerator for 2-3 hours. Caramelize the sugar in a saucepan, deglaze with port wine. Add the balsamic vinegar and cherries and simmer for about 15 minutes until the liquid is reduced by half. Allow to cool. Before serving, briefly dip the molds in hot water. Carefully loosen the cream with a sharp knife and turn it out onto dessert plates. Serve garnished with port wine cherries.
