Ingredients for 6 servings:
- 10 ladyfingers
- 250 g QimiQ, room temperature
- 100 g mascarpone
- 220 g chestnuts, pureed
- 40 g sugar , (1)
- 3 tbsp cherry brandy, (1)
- ½ dl milk
- 1 dl cream
- 1 dl water, hot
- 1 ½ tbsp instant coffee powder
- 1 tbsp sugar , (2)
- 1 tbsp cherry brandy, (2)
- Cocoa powder
Instructions
Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes
Whisk the QimiQ until smooth, add the mascarpone, and add all the other ingredients up to and including the milk. Whisk until creamy. Whip the cream until stiff, then carefully fold it into the mixture. Dissolve the instant coffee in the hot water, add sugar (2), and garnish with kirsch (2) if desired. Line a baking dish with sponge fingers and soak them in the coffee. Spread the cream over the top and chill for 2-3 hours. Sprinkle with chocolate powder before serving. Tip: If you use a smaller dish, you can fill it in multiple layers.
