Quark balls

Ingredients for 1 servings:

  • 2 eggs
  • 125 g sugar
  • 250 g quark
  • 250 g flour
  • ½ tsp, leveled baking powder
  • 1 pinch of salt
  • 2 tsp vanilla sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes

Beat the eggs with sugar, vanilla sugar, and a pinch of salt until frothy. Add the quark and stir until a smooth batter forms. Sift the flour and baking powder and stir the mixture into the quark mixture. Then let the batter rest a little. Heat the frying oil in a saucepan or frying pan with high sides to approximately 170 degrees Celsius. Test whether the oil is hot enough with a wooden skewer. Dip the wooden skewer into the oil. If small bubbles rise, it is hot enough. Using two tablespoons or an ice cream scoop, carefully drop small portions of the batter into the hot oil. Don’t add too many at once, or the oil will cool too quickly and the quark balls won’t crisp up. Turn the balls as needed to ensure they brown evenly. When the quark balls are nicely browned, remove them from the hot oil with a slotted spoon and let them drain on a piece of kitchen paper and cool slightly. Finally, roll them in sugar.
