Ingredients for 2 servings:

  • 400 g potatoes, cooked, cold from the day before
  • 100 g low-fat curd cheese
  • 2 tbsp flour, maybe more
  • ½ tsp baking powder
  • 1 small egg(s)
  • 1 pinch of salt
  • 1 tsp, heaped ginger, grated or ground
  • 1 tsp, levelled vanilla
  • 2 tbsp raisins, dusted with flour
  • ½ tsp flavoring (Citroback) or lime juice
  • 1 tsp sugar or sweetener
  • 3 tsp clarified butter
  • n. B. Fruit (tropical fruit mix, frozen), thawed

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Similar to pancakes, maybe tastes better and is lighter!

Peel the potatoes and press them through a potato ricer. Add the quark, flour, baking powder, egg, and salt and mix well. If the mixture is too soft, add a little more flour (about 1 tbsp). Season with ginger, vanilla, lemon flavor, and sugar. Mix the raisins into the batter. Form them into 6-8 oval, flat cakes (Keulchen). Don’t let the Keulchen stand for too long; instead, quickly fry them in a large non-stick pan in a moderate amount of clarified butter over medium heat for about 10 minutes per side until golden brown. A tropical fruit mix, as well as applesauce or compote, are delicious as an accompaniment.
