Quark Bundt Cake

Ingredients for 1 servings:

  • 200 g butter
  • 200 g sugar
  • 3 eggs
  • 1 pinch of salt
  • some lemon peel, grated or lemon flavoring
  • 250 g quark
  • 400 g flour
  • 1 tbsp baking powder
  • 100 g sultanas or currants
  • some cream or milk, if needed
  • lots of powdered sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cream the butter, sugar, eggs, a pinch of salt, and lemon zest or lemon flavoring until fluffy. Then stir in the quark until the mixture is nice and smooth. Mix the flour with the baking powder, sift it over the mixture, and knead everything into a dough. Finally, fold in the sultanas/currants. If the quark is very dry, add a little cream or milk if necessary. Bake in a pre-heated oven at 180°C (top/bottom heat) for about 1 hour in a prepared Bundt cake tin. Dust generously with icing sugar. Tip: You can also brush the top with melted butter beforehand!
