Ingredients for 4 servings:

  • 500 g quark
  • 3 egg yolks
  • 70 g sugar
  • 60 g semolina
  • ½ lemon(s), the juice
  • 1 tsp baking powder
  • 3 egg whites
  • 2 tbsp, levelled sugar
  • Fruit, of your choice, from the can
  • 250 ml juice from the can
  • 1 tbsp cornstarch
  • 3 tbsp water
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Combine all ingredients (from quark to baking powder) in a mixing bowl and mix with a hand mixer for 2 minutes. Then, beat the egg whites until stiff, add the sugar, beat again, and fold the egg whites into the quark mixture. Grease a baking dish, pour in 2/3 of the batter, drain well, spread on the quark, and cover with the remaining quark (I prefer mandarin oranges). Finally, bring the fruit juice to a boil and thicken with cornstarch (mix the fruit juice and cornstarch with water). Baking time and temperature: at 175°C (350°F) for approximately 40-50 minutes.
