Quark casserole with fruit

Ingredients for 2 servings:

  • 30 g butter
  • 50 g sugar
  • 2 eggs
  • 250 g low-fat curd cheese
  • 1 tbsp cornstarch or 1 packet vanilla pudding powder
  • 200 g fruit of your choice, chopped
  • 2 tsp sugar
  • 2 tsp desiccated coconut
  • Butter for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Beat butter, sugar, and eggs until fluffy. Stir in quark and cornstarch or vanilla pudding powder. Pour half of the mixture into a buttered dish. Place the fruit on top and sprinkle with 1 teaspoon each of sugar and coconut flakes. Pour the remaining quark mixture over the top and sprinkle with another teaspoon each of sugar and coconut. Bake in a preheated oven at 200°C (top/bottom heat) for about 35-40 minutes, until the casserole is golden brown. Caution: The casserole will rise quite a bit! Variations: Low Fat: Omit the butter or use half-fat butter, only 30g of sugar. Babies: Instead of fruit, use a jar of fruit or pureed fruit. This casserole is very quick to make, and kids love it (my husband does too…)
