Ingredients for 4 servings:

  • 250 ml milk (plant milk)
  • 400 g silken tofu
  • 3 tbsp sugar
  • 1 packet of vanilla sugar
  • 1 tsp lemon peel, grated
  • 3 tbsp cornstarch
  • 5 rolls (wholemeal)
  • 4 large apples
  • 1 handful of raisins, optional
  • 4 tbsp breadcrumbs
  • some cinnamon, for sprinkling
  • some margarine, for greasing

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Combine the plant-based milk, silken tofu, sugar, vanilla sugar, lemon zest, and cornstarch in a blender or mixer. Slice the rolls and soak them in the sauce. Meanwhile, peel, core, and coarsely grate the apples. Wash the raisins. Combine the apples, rolls, and raisins and place them in a baking dish greased with margarine along with the sauce. Sprinkle with breadcrumbs and cinnamon. Bake at 180°C for 30 minutes and serve with warm vegan vanilla sauce.
