Quark semolina casserole with berries

Ingredients for 1 servings:

  • 1 egg(s)
  • 200 g quark or skyr
  • 15 g spelt semolina
  • 40 g raspberries
  • 40 g blueberries
  • possibly erythritol (powdered sugar substitute)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Vegetarian, low-calorie, sugar-free

Separate the egg and beat the egg white until frothy. Combine the egg yolk with the skyr and semolina. Fold in the egg white and pour the mixture into a baking dish. Spread the berries on top and sprinkle with powdered erythritol, if desired. Bake at 180°C for approximately 15-20 minutes, until the casserole is lightly browned. Be careful! It can burn easily.
