Quark – cheese – pancake

Ingredients for 4 servings:

  • 225 g bacon, diced, streaky or bacon cubes
  • 6 eggs
  • 400 g low-fat curd cheese
  • 8 tbsp flour
  • 10 tbsp mountain cheese, grated or other hard
  • 3 tsp marjoram, dried (also fresh herbs)
  • salt and pepper
  • 1 pinch(s) nutmeg, grated
  • Oil, for baking

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Fry the bacon cubes in a pan until crispy. Mix the eggs, quark, flour, cheese, marjoram, salt, pepper, and nutmeg in a bowl. Add the bacon cubes and stir in. Heat 1 tablespoon of oil in a non-stick pan. Place small heaping spoonfuls in the pan, smooth them down slightly, and bake for about 5 minutes, turning once. They should be golden brown. Briefly degrease the baked fritters on a paper towel and then keep them warm on a plate in the oven (approx. 100-150°C) until all the batter has cooked through. Serve with a seasonal salad or whatever you like.
