Quark – cinnamon – casserole

Ingredients for 4 servings:

  • 500 g quark
  • 3 tsp cinnamon
  • 75 g semolina
  • 1 tbsp sugar
  • 2 vanilla pods, scraped pulp
  • ½ tsp lemon zest
  • 7 eggs
  • 1 tsp butter
  • powdered sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Squeeze out the quark well, stir in the cinnamon, sugar, semolina (if the mixture is too runny, add a little more semolina), vanilla bean paste, and lemon zest until smooth, then let it rest for 10 minutes. Separate the eggs. Stir the egg yolks into the mixture, beat the egg whites until stiff peaks form, and fold in. Grease a baking dish with butter, pour in the quark mixture, and bake the casserole in a preheated oven at 180°C for 20 to 25 minutes. Divide the mixture into portions and serve dusted with powdered sugar. Serve with a fruit sauce of your choice.
