Ingredients for 4 servings:

  • 600 g quark, low-fat
  • 100 g semolina
  • 2 tbsp flour
  • 2 eggs
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

with sweet or savory

Drain the liquid from the quark and then mix it with the eggs, semolina, flour, and a pinch of salt. Let the quark mixture rest for 1 hour. With wet hands, form dumplings about the size of an egg. Place them in boiling, lightly salted water. Simmer for about 5 minutes. When the dumplings rise to the surface, they are cooked. You can eat the quark dumplings sprinkled with sugar or with applesauce or compote—but you can also make them savory! If you’re in a hurry, you can skip the resting time. A simple recipe—also suitable for children.
