Ingredients for 4 servings:
- 40 g low-fat curd cheese
- 75 g instant flour
- 1 m.-sized egg(s)
- 2 tbsp sugar
- 1 pinch of salt
- 4 soft apricots (approx. 40 g)
- 25 g poppy seed flour
- Flour for the work surface
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes
Mix the quark, flour, egg, sugar, and salt into a smooth dough and chill. Fill the apricots with the poppy seed mixture. Dust a work surface with flour, knead the dough thoroughly (adding a little more if necessary), divide into four equal pieces, and press into thin, round flatbreads. Place an apricot on each piece, gather the dough around it, and carefully shape into dumplings with floured hands. Cook uncovered in simmering water for about 20 minutes, then halve. Tip: Serve over warm pear compote.
