Quark dumplings with strawberries

Ingredients for 4 servings:

  • 40 g butter
  • 450 g quark (low-fat quark, 0.2% fat)
  • 2 eggs
  • 170 g flour
  • flavoring (Citroback)
  • Salt
  • 2 packets of vanilla sugar
  • 250 g strawberries (frozen)

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes

Low Fat 30

Cream the butter in a bowl until fluffy. Alternately stir in the quark, eggs, and flour. Add Citroback, salt, and vanilla sugar and mix well. Cover the dough with a cloth and refrigerate for 4 hours. First, form small dumplings from the dough and press an indentation into each dumpling. Then place a frozen strawberry into the indentation and reseal the dumpling tightly. Bring plenty of salted water to a boil. Add the dumplings and cook for about 2 minutes. Then reduce the heat slightly and let the dumplings simmer for another 6 minutes. Tip: Serve with fresh strawberry puree, sweetened with a little sugar. Garnish with lemon balm leaves.
