Ingredients for 4 servings:

  • 900 g berries, red, e.g. strawberries
  • 200 g sugar, possibly more
  • 130 g semolina (soft wheat)
  • 500 ml lemonade (raspberry soda), e.g. Zilles Rote Fassbrause
  • 1 lemon(s), juice
  • ½ liter sauce (vanilla), more if desired

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Cooking/baking time approx. 15 minutes; Total time approx. 1 day 35 minutes

Red semolina pudding

Rinse the berries, place them in a large pot, and bring to a boil. When the berries are boiling, add the lemon juice, sugar, and semolina, stirring constantly. When the mixture thickens, slowly stir in the raspberry soda until the desired consistency is reached, but no more than 500 ml, otherwise it will be too thin. If the berry compote is too sour, add more sugar if necessary. But be careful, the result may vary depending on the berries and the soda. Pour the compote into a bowl, cool, and let it sit for a day.
