Quark – Fruit – Stollen

Ingredients for 20 servings:

  • 150 g butter, soft
  • 150 g sugar
  • 2 eggs
  • 250 g quark (low-fat quark)
  • 1 tsp lemon(s) – zest, grated
  • 1 packet of vanilla sugar
  • 50 g apricot(s), dried
  • 50 g candied lemon peel
  • 50 g candied orange peel
  • 50 g almonds, chopped
  • 50 g hazelnuts, chopped
  • 100 g raisins
  • 500 g flour
  • 1 packet of baking powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cream the butter and sugar until fluffy, then beat in the eggs. Mix in the quark, lemon zest, and vanilla sugar. Chop the nuts and dried fruit, if desired (this works well with the nuts in the food processor) and mix in. Mix the flour with the baking powder, stir in half, and then knead in the other half. Shape the dough into a stollen and bake at about 200°C for 45 minutes. Test for doneness! While the stollen is still lukewarm, brush it thickly with butter and sprinkle with powdered sugar. The stollen will keep for at least a week if well-wrapped.
