Lemon – Apple – Bread

Ingredients for 1 servings:

  • 500 g flour (wheat flour), (Type 405)
  • 1 packet of yeast (dry yeast)
  • 3 tsp sugar
  • 1 ½ tsp salt
  • some lemon(s) – zest, grated
  • 1 cup crème fraîche
  • 50 g margarine, melted, cooled
  • 125 ml milk, lukewarm
  • 1 m.-sized apple
  • 2 tbsp lemon balm, finely chopped
  • some sesame

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

ALSO SUITABLE FOR BAKING MACHINE! Sift wheat flour into a mixing bowl and mix thoroughly with the dried yeast. Add sugar, salt, lemon zest, crème fraîche, margarine and milk. Using a hand mixer fitted with a dough hook, mix the ingredients together, first on the lowest setting and then on the highest setting, for about 5 minutes until you have a smooth dough. Cover and leave to rise in a warm place until it has visibly increased in size. Peel, quarter and core the apple and coarsely grate it. Knead it into the dough with the lemon balm on a medium setting. Remove the dough from the bowl. Shape the dough into 4 equal-sized balls and place them in a springform pan (26 cm, greased base). Brush the dough with water and sprinkle with sesame seeds. Leave the dough to rise again in a warm place until it has visibly increased in size. Place the pan on the oven rack. Top/bottom heat: about 200 °C (preheated) Fan oven: about 180 °C (not preheated) Gas mark 3 – 4 (preheated) Baking time: 40 – 50 minutes
