Ingredients for 2 servings:

  • 350 g low-fat curd cheese
  • 2 eggs, size M
  • 2 tbsp whole wheat flour or guar gum
  • Salt
  • Guar gum for dusting
  • Butter for frying

Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 45 minutes

Place the low-fat quark, eggs, whole wheat flour, and a pinch of salt in a sufficiently large bowl and mix the ingredients thoroughly. Then let it rise for about 15 minutes. The dough should no longer be too sticky, but still be chewy. Add a little flour if necessary and let it rise for another five minutes. Put a pot of water on the stovetop and bring to a boil. Lightly salt the water. Remove the dough from the bowl and dust all over with a little guar gum. Then form small balls from the dough and make a well in the center with a fork. Add them to the boiling water. As soon as they float to the surface, skim off and let drain. Then melt the butter in a pan. Once the right temperature is reached, fry the quark noodles until golden brown. Be careful, this goes very quickly. Tip: If you want to go completely low-carb, you can replace the whole wheat flour with guar gum.
