Quark-nut cake a la Mäusle

Ingredients for 1 servings:

  • 200 g raw cane sugar, brown
  • 1 pinch of salt
  • 6 eggs
  • 500 g low-fat curd cheese
  • 200 ml cream
  • 200 g ground almonds
  • 200 g hazelnuts, ground
  • 30 g cornstarch (not potato flour)
  • 2 tsp cream of tartar baking powder
  • e.g. powdered sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Line the bottom of a 26 cm springform pan with parchment paper. Preheat the oven to 200 degrees Celsius. Beat the eggs with the sugar and salt using a hand mixer or a food processor for 10 minutes. Quickly stir the quark and cream into the egg mixture. Mix the almonds and hazelnuts with the cornstarch and cream of tartar, stirring in a spoonful at a time. Pour the batter into the prepared springform pan. Bake at 200 degrees Celsius for 15 minutes, then for another 35 to 45 minutes at 175 degrees Celsius (test with a toothpick). Allow the cake to cool completely and dust with powdered sugar, if desired.
