Quark-orange-almond cookies

Ingredients for 4 servings:

  • 2 m.-large egg whites
  • 2 packets of vanilla sugar
  • 7 tbsp milk
  • some flavoring (orange flavor)
  • 300 g flour (type 405)
  • 1 medium egg yolk
  • 50 g sugar
  • 100 g butter, room temperature
  • 3 tbsp brown cane sugar
  • 1 tsp baking powder
  • 4 tbsp cocoa powder
  • 4 tbsp almonds, chopped
  • 150 g quark
  • 1 handful of almond flakes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Combine 300g flour, 1 egg yolk, 50g sugar, 100g butter, 3 tbsp brown cane sugar, 1 tsp baking powder, 4 tbsp cocoa powder, 4 tbsp chopped almonds, 150g quark, and 3 tbsp milk in a bowl and mix. Beat 2 egg whites with 2 packets of vanilla sugar, 4 tbsp milk, and a few drops of orange flavoring until frothy. Add the beaten egg whites to the other ingredients and knead everything with a mixer until a dough forms. The dough will be a bit sticky, but with the help of two spoons, it can easily be spread onto a baking sheet in blobs and baked immediately. Sprinkle a few flaked almonds on each pile and bake in the oven at 175°C (top/bottom heat) for about 15 minutes. If you like moist dough, you must try this recipe. The cookies are slightly reminiscent of cooled pancakes.
