Ingredients for 1 servings:

  • 500 ml milk, warm
  • 250 g butter, melted and cooled
  • 42 g yeast, fresh
  • 1 packet of vanilla sugar
  • 160 g sugar
  • 1 egg(s)
  • 900 g flour
  • 250 g quark
  • 2 packets of vanilla sugar
  • 1 egg(s)
  • 2 tbsp flour
  • 1 tbsp sugar
  • 200 g powdered sugar
  • cream

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 55 minutes

For the dough, dissolve the yeast in the warm milk. Then knead all the ingredients into a dough. If the dough is still sticky, add a little more flour, but it shouldn’t be too firm. Let the dough rise in a warm place for about 1 hour. It should at least double in size. For the filling, mix the ingredients together and set aside. Form small 70g rolls from the dough, flatten them, and place 1 teaspoon of the quark filling in the center. Cut two slits on two opposite sides with a knife. Pull one side through the opposite slit so that the filling is visible in the center. Let rest for 10 minutes. Meanwhile, preheat the oven to 180°C (350°F). Bake the quark pastries for about 15 minutes. For the glaze, mix the icing sugar with the cream. Use enough cream to form a thick mixture. Spread this over the still-warm quark pastries.
