Quark semolina casserole

Ingredients for 4 servings:

  • 1 liter of milk (1.5% fat)
  • 2 pinches of salt
  • 80 g semolina
  • 500 g quark
  • 6 eggs
  • 120 g sugar
  • 1 lemon(s) , (grated peel)
  • 2 tbsp lemon juice
  • 40 g butter
  • 40 g almond(s), ground
  • 2 cans of apricots (400g each)

Bring the milk and salt to a boil. Sprinkle in the semolina and simmer over low heat for about 5 minutes, stirring constantly, then let it cool. Place the quark in a bowl, separate the eggs, and add the egg yolks to the quark. Add the sugar, lemon zest, and lemon juice. Mix everything well with the whisk attachment of an electric mixer, then stir in the semolina porridge. Beat the egg whites until stiff and fold into the quark and semolina. Pour the mixture into a baking dish. Melt the butter and mix with the almonds, spreading the mixture over the quark mixture. Bake the casserole in a preheated oven at 160°C for 50 to 60 minutes. Drain the apricots and serve with the casserole. 770 kcal, 98 g carbs, 20 g fat, 23% fat calories
