Quark – semolina dumplings

Ingredients for 4 servings:

  • 100 g semolina
  • 500 g quark (cottage cheese)
  • 100 g butter, melted
  • 2 eggs
  • 1 pinch of salt
  • 100 g flour
  • 50 g sugar (or to taste)
  • n. B. Butter for rolling
  • n. B. Breadcrumbs for rolling

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Combine all ingredients in a bowl and mix. Let the mixture stand for about 20 minutes. Then form dumplings as desired (this works best if you moisten your hands slightly). Then let stand in salted water for about 15-20 minutes (the water should just simmer, not boil). Remove from the bowl and roll in a mixture of butter and breadcrumbs. Tip: This is usually served with a raspberry sauce. To make this, caramelize the sugar, pour in 1/16 l orange juice, and add the raspberries (frozen raspberries will work, of course). Let it reduce slightly, then puree. Thicken with a little vanilla pudding powder mixed with orange juice. If the raspberry seeds bother you, you can of course also pass the sauce through a sieve.
