Quark-spelt-semolina-wholemeal pancakes

Ingredients for 2 servings:

  • 250 g quark
  • 25 g sugar
  • 1 ½ packs of vanilla sugar, real
  • 25 g butter, very soft
  • 1 egg(s)
  • 20 g wholemeal flour
  • 60 g wholemeal spelt semolina
  • 50 g milk
  • ¼ tsp baking powder
  • e.g. maple syrup
  • 2 tbsp oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Separate the egg. Beat the egg whites. Cream the butter and egg yolks until fluffy. Add the sugar and vanilla sugar and continue beating. Add the milk and quark and continue beating. Fold in the egg whites, semolina, and flour with the baking powder. Heat a pan with fat and cook small pancakes. Turn once. Transfer to a plate and serve with maple syrup, if desired.
