Breakfast with boiled potatoes and shrimp

Ingredients for 4 servings:

  • 750 g jacket potatoes
  • 150 g bacon, streaky
  • 2 cans of shrimp, drained
  • 3 gherkins, diced
  • 8 eggs
  • Salt
  • pepper
  • some chives

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cook the potatoes in their jacket potatoes. Peel and slice them. Dice the bacon and fry in a pan. Add the potato slices. Fry until browned and season with salt. Add the shrimp and cucumbers. Beat the eggs with salt and pepper. Pour over the potatoes and let them set over low heat for 10 minutes. Garnish with chives and serve immediately.
