Quark sponge cake (for a small cake tin)

Ingredients for 1 servings:

  • 150 g wheat flour (type 550 or 405)
  • 2 eggs
  • 90 g sugar
  • 1 vanilla sugar
  • 50 g butter, soft
  • 120 g quark (40%)
  • 1 tsp baking powder
  • 1 shot of rum
  • 2 drops butter-vanilla flavoring

Beat the eggs with the sugar and vanilla sugar until fluffy. Then stir in the softened butter, quark, rum and flavoring. Mix the flour with the baking powder and add while stirring. Preheat the oven (fan: 160°C, top and bottom heat: 180°C). Grease a small loaf pan. Pour in the batter and bake for approx. 50-60 minutes. When the cake is lightly browned and no batter sticks to the cake when a skewer is inserted, it is ready. Turn the cake out, let it cool slightly and dust with powdered sugar. It will still taste very moist the next day. Tip: If you like, you can spice up the sponge cake even more, e.g. with chopped apples or other fruit, raisins, etc. If you want to use a normal-sized cake pan, simply double the ingredients.
