Ingredients for 4 servings:
- 1 kg potatoes, boiled, mashed (or mashed)
- 300 g quark
- 300 g flour
- 2 eggs
- 3 tbsp sugar
- 1 pinch of salt

My mother’s original recipe
Boil the potatoes, drain, steam thoroughly, and quickly press through a sieve or hand press. Immediately combine with the pressed quark, eggs, flour, sugar, and a pinch of salt. Form the mixture into small patties (allow two tablespoons for each serving). Slowly fry the flat patties on both sides in butter or lard until golden brown and serve sprinkled with caster sugar.
