Queen Pie
The perfect queen pie recipe with a picture and simple step-by-step instructions.
For the chicken:
- 1 Pc. Soup chicken
- 1 Pc. Bouquet garni
For the veal dumplings:
- 250 g Veal minced meat
- 1 Pc. Onion
- 2 tbsp Flour
- 1 tsp Semolina
- 1 pinch Nutmeg
- Pepper
- Salt
For the sauce:
- 50 g Butter
- 2 tbsp Flour
- 5 Pc. Mushrooms
- 1 Pc. Egg yolk
- 5 Pc. Puff pastry pies
- Boil the soup chicken with the bouquet garni for 5 hours, bone and cut into pieces. Mix all the ingredients for the veal dumplings with a little warm milk and form small balls out of them. Let it steep gently in part of the broth for about 15 minutes.
- Meanwhile, gently heat the pies in the oven at around 80 degrees.
- Make a roux for the sauce and deglaze with broth. Add the chicken, veal balls and mushrooms, diced. Stir in the cream and egg yolks. Finally pour into the hot pies.
