Queen Pie

The perfect queen pie recipe with a picture and simple step-by-step instructions.

For the chicken:

  • 1 Pc. Soup chicken
  • 1 Pc. Bouquet garni

For the veal dumplings:

  • 250 g Veal minced meat
  • 1 Pc. Onion
  • 2 tbsp Flour
  • 1 tsp Semolina
  • 1 pinch Nutmeg
  • Pepper
  • Salt

For the sauce:

  • 50 g Butter
  • 2 tbsp Flour
  • 5 Pc. Mushrooms
  • 1 Pc. Egg yolk
  • 5 Pc. Puff pastry pies
  1. Boil the soup chicken with the bouquet garni for 5 hours, bone and cut into pieces. Mix all the ingredients for the veal dumplings with a little warm milk and form small balls out of them. Let it steep gently in part of the broth for about 15 minutes.
  2. Meanwhile, gently heat the pies in the oven at around 80 degrees.
  3. Make a roux for the sauce and deglaze with broth. Add the chicken, veal balls and mushrooms, diced. Stir in the cream and egg yolks. Finally pour into the hot pies.
