Quesadillas with hummus, peppers and tomatoes

Ingredients for 1 servings:

  • 1 tortilla wrap
  • 2 tbsp hummus, spicy
  • 6 cherry tomatoes
  • 1 small shallot(s) or onion
  • 5 olives
  • ½ bell pepper(s)
  • 2 tbsp tomato sauce
  • e.g. curry powder
  • n. B. garlic granules
  • e.g. Cheddar cheese
  • 1 tbsp oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

vegetarian, slightly spicy

Dice the shallot, cherry tomatoes, bell pepper, and olives. Spread the hummus generously around the edges. Spread the tomato sauce in the center. Spread the chopped ingredients on one half of the tortilla, taking care not to place it too close to the edge. Season with curry powder and garlic granules, if desired. If you like, you can also spread grated cheddar cheese over the vegetables. Fold the tortilla closed and use the hummus to seal the edges. Fry the quesadilla in a pan with oil until golden brown on both sides.
