Quiche with breakfast bacon

Ingredients for 4 servings:

  • 125 g butter, soft
  • 1 pack of puff pastry from the refrigerated section (roll)
  • Herbs (garden herbs), dried
  • 200 ml quark
  • 200 ml cream
  • Cayenne pepper
  • 125 g breakfast bacon
  • 3 eggs
  • Butter for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Carefully roll out the puff pastry and place it in the buttered springform pan. Pull the pastry up to about half the height of the springform pan, forming a rim. This will create a nice, sturdy side wall after baking. Remove any gristle and rind from the bacon, dice it, and fry it in a pan over medium heat, stirring occasionally, for about 10 minutes until translucent. Stir in some dried garden herbs. Thoroughly mix the quark with the cream, a little cayenne pepper, and the eggs, and season with salt. Pour the quark mixture onto the puff pastry and sprinkle with the bacon cubes. Bake the quiche in the oven at 180 degrees Celsius on the lowest rack for about 50 minutes, until the surface is browned.
