Quiche without a base

Ingredients for 4 servings:

  • 4 eggs
  • some salt
  • 1 pinch(s) of pepper
  • 1 pinch of paprika powder
  • some parsley
  • ¼ bell pepper(s)
  • 6 cocktail tomatoes
  • some feta cheese, approx. 50 g
  • 1 spring onion(s)
  • some oil for the molds

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Whisk the eggs and season with salt, pepper, and paprika. Finely chop the parsley, dice the spring onion, and finely chop the bell pepper (1/4 of which is enough for this batch), then mix everything into the egg mixture. Stir in the feta (about 50g). Grease the baking dishes with a little oil. Pour the egg mixture evenly into the mixture. Cut the cherry tomatoes into eighths and place them on top. Bake in the oven at approximately 175-180°C for 25 minutes. This recipe is for 4 small quiche dishes. For a large quiche dish, the quantities will need to be increased slightly.
