Quick and easy Caprese baguette

Ingredients for 2 servings:

  • 1 baguette(s) or ciabatta
  • 2 m.-large tomato(s)
  • 1 pack of mozzarella
  • 1 jar pesto, green
  • 4 basil leaves

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Wash the tomatoes and cut them into thin slices, just like the mozzarella. Then cut the baguette (or ciabatta) every 3 to 5 cm, making sure not to cut all the way through to the bottom so that the baguette still holds together in one piece. Now, using a spoon, fill the green pesto between the slits in the baguette and place a slice of tomato and a slice of mozzarella in each slit, leaving the tomatoes and mozzarella slightly raised above the baguette. Then put the baguette in the oven at around 180°C for 10-15 minutes and let it bake. The baguette is ready when the mozzarella starts to melt nicely and the bread has taken on a light brown color. Serve this delicious baguette with fresh basil leaves.
