Quick and easy one-pot stuffed peppers with minced meat and rice

Ingredients for 4 servings:

  • 8 bell peppers
  • 350 g Basmati rice, uncooked
  • 1 large onion(s)
  • 500 g minced meat, already seasoned
  • 1 tbsp tomato paste
  • some oil for frying
  • Paprika powder, sweet
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

First, wash the peppers, then cut off the tops and deseed the pods. You’ll need a large pot large enough to hold all the peppers upright. Wash the rice in a sieve and place it in a large bowl. Dice the onion, add it to the bowl along with the minced meat, tomato paste, a dash of oil, sweet paprika, salt, and pepper, and mix everything together. Pour the mixture into the peppers. Add a little oil to the pot and fry the peppers for a few minutes. Then pour enough water into the pot to cover the peppers up to 1 cm below the rim. Cover and let the peppers simmer gently for 30-40 minutes. Finally, pour some of the cooking broth over the stuffing.
