Quick apple cake with crumble, mascarpone and yogurt

Ingredients for 1 servings:

  • 200 g spelt flour type 630
  • 80 g sugar
  • 1 egg(s)
  • 100 g butter, liquid
  • 1 pinch of salt
  • ½ sachet of baking powder
  • 1 tbsp cream
  • 200 g mascarpone
  • 200 g natural yogurt
  • 80 g sugar
  • 2 tbsp lemon juice
  • 1 sachet of cream pudding powder
  • 400 g apple compote
  • 1 handful of raisins
  • 50 g butter, liquid
  • 80 g spelt flour type 630
  • 80 g sugar
  • 1 tsp cinnamon powder
  • Fat and breadcrumbs for the mold

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 42 minutes; Total time approx. 1 hour 7 minutes

Combine the ingredients in the dough to form a crumbly batter and pour it into a greased and crumbled pan. Spread the batter evenly and press it down firmly. Using a hand mixer, mix the mascarpone, yogurt, sugar, lemon juice, and custard powder well. Then fold in the apple compote and raisins. Spread this mixture over the batter. Mix the melted butter, flour, sugar, and cinnamon to make a crumble. Spread the crumble evenly over the apple mixture. Bake the cake in a preheated oven at 190°C (top/bottom heat) for about 35 minutes. Then switch to bottom heat and bake the cake for about 7 minutes.
