Ingredients for 1 servings:

  • 55 g walnuts
  • 230 g flour
  • 30 g cocoa powder
  • 200 g sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 85 g chocolate, chopped
  • 2 eggs
  • 113 g butter, soft
  • 4 m.-large banana(s), ripe
  • 2 tsp vanilla sugar
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

American chocolate banana cake

Preheat the oven to approximately 170°C (top/bottom heat). Place the walnuts on a baking sheet and roast on the middle rack for approximately 8-10 minutes. In the meantime, chop the chocolate. Remove the walnuts from the oven, let them cool briefly, and then roughly chop them. Melt the butter and let it cool slightly. In a bowl or saucepan, combine all the dry ingredients. In a second bowl, mash the bananas and mix them with the eggs and butter. Using a wooden spoon, stir the wet ingredients into the flour mixture. Do not overmix, just until no flour is visible. Now fold in the chocolate and chopped nuts. Grease a loaf pan or line it with baking paper and pour in the batter. Bake the chocolate banana bread for approximately 55-65 minutes at 170°C; do the skewer test. After about 40 minutes, cover the cake with aluminum foil or reduce the temperature slightly to prevent it from burning. Allow to cool completely on a wire rack. It can be eaten lukewarm or at room temperature.
