Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 250 g oat bran
  • 50 g spelt bran or wheat bran
  • 5 eggs
  • 5 tbsp flaxseed
  • 1 packet of baking powder
  • 1 tsp, heaped salt
  • possibly grease for the mold

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 10 minutes

without yeast

Mix all ingredients well and pour into a greased or parchment-lined loaf pan. Place in an oven preheated to 180°C (350°F). Bake for 40 minutes on the middle rack. Then cover with aluminum foil and raise the oven to a higher rack, then bake for another 20 minutes. Allow to cool completely before slicing. The bread will keep fresh in the refrigerator, but it also tastes delicious frozen in slices and then toasted.
