Quick cake with apples

Ingredients for 1 servings:

  • 2 eggs
  • 60 g butter
  • 150 g sugar
  • some lemon peel
  • ½ lemon(s), the juice
  • 200 g flour, gluten-free white
  • ½ pack of baking powder
  • 100 ml milk
  • 1 tbsp rum
  • 6 apples
  • 100 g butter
  • 100 g sugar
  • 25 g ground almonds
  • 175 g flour, gluten-free light
  • Cinnamon

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Separate the eggs and beat the egg whites until stiff. Place the butter, sugar, egg yolks, lemon juice, and zest in a mixing bowl and beat until fluffy. Mix the flour with the baking powder and stir in alternately with the milk. If no children are present, mix in the spoonful of rum. Finally, fold in the stiffly beaten egg whites. Pour the batter into a springform pan lined with baking paper and smooth it out. Peel, quarter, and core the apples. Score them several times with a knife and spread them over the batter. Now, for the crumble, first melt the butter. Then, in a bowl, mix the dry ingredients, adding cinnamon to taste. Now pour in the melted butter and knead everything with your hands into crumbles. Spread these over the apples. Bake at 160 degrees Celsius (convection oven) for about 50 minutes. For the crumble, it is important to add the ground almonds. I experimented for a long time to get decent crumbles using gluten-free flour. Since I added almonds, it finally works and the crumbles no longer collapse.
