Quick cheese spaetzle with mushrooms

Ingredients for 2 servings:

  • 125 g Spätzle, dried
  • salt water
  • 200 g crème fraîche
  • ½ onion(s)
  • 250 g mushrooms, brown
  • 100 g cheese (Emmentaler,) grated
  • some olive oil
  • 1 tsp parsley (frozen)
  • nutmeg
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Bring the salted water to a boil for the spaetzle, then chop the onion and fry it in a pan with a little olive oil until translucent. Once the water in the pot is boiling, prepare the spaetzle according to the package instructions. Meanwhile, chop the mushrooms and add them to the translucent onions, fry for about 5 minutes, and season with salt and pepper. Now mix the crème fraîche and cheese into the mushrooms and season to taste with nutmeg, paprika, and more salt and pepper, if desired. Finally, drain the spaetzle and toss them with the sauce in the pan, then sprinkle with 1 teaspoon of parsley.
