Quick Chinese noodle stir-fry

Ingredients for 4 servings:

  • 500 g minced meat
  • 1 m.-large zucchini
  • 4 tomatoes
  • 4 spring onions
  • ½ cup crème fraîche with herbs
  • ½ bag of glass noodles or other Chinese noodles
  • 4 carrots

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Minced meat, zucchini, tomatoes. Truly delicious.

Coarsely grate the zucchini and carrots. Slice the spring onions into rings. Roughly dice the tomatoes. Soak the noodles in boiling water according to the package instructions. Brown the minced meat in a wok or pan. When it’s cooked through and crumbly, add the carrots and zucchini to the wok and fry briefly, then reduce the heat to prevent burning. Add the spring onions to the wok, as well as the tomatoes. Stir and turn frequently to prevent burning. Add the noodles to the wok and fry briefly over high heat. Stir in the crème fraîche and season with a little salt and pepper. I used up all the leftovers from my fridge this way. The tomatoes and crème fraîche ensure the dish isn’t too dry, even without the sauce.
